Grizzly Man and Little Dieter needs to fly have already been mentioned, but generally most of of Herzog's docs or docs about Herzog (like Burden of Dreams that Andvil posted) are gold. Try to find Werner Herzog Eats His Shoe, one of the few movies that actually delivers exactly what the title promises.
Manda a Bala is good newish one that hasn't been mentioned yet (similar in style and approach to Cocaine Cowboys). It's about the culture of kidnapping that developed in Brazil. I've read some reviews that criticize it for treating the subject in a shallow and exploitative way, but while it may not be the best academic discussion it is fantastically entertaining.

a couple GREAT hour-long docs on youtube worth checking out:::
anyone have the documentary on a man who is traveling around telling people that he is dying. The film was in IFC in 2007-2008. I saw it then and was suprised at some of the responses he recieved from people. Most asking him about friends, family, and God.
nah i want something about all these random ~rican dudes i've been seeing for years who always wear slayer t-shirts and gothmetal paraphanelia. these are not random isolated incidents and the style they adopt is too similar across the board to be a coincidence. this is def a full on subculture and every subculture has to have a center/ground zero of some sort. shit's bizarre and needs to be investigated.
Just watched a documentary yesterday titled " A State of Mind", follows two young North Korean gymnasts as they prepare for the "Mass Games". The real interest in watching it lies in catching a glimpse of North Korean culture, supposedly this is the first time cameras have been allowed access to film in North Korea.
Very eye opening documentary, anyone who's interested in North Korea will enjoy this. I largely underestimated the fanaticism North Koreans harbor for Kim Jong Il. The obvious similarities between North Korean society and Orwell's in 1984 are also eerie.
